Description
Ingredients:
- 1.5 kg sirloin roast
- 10 g coarse sea salt (adjust to taste)
- 5 g freshly ground black pepper
- 5 g garlic powder
- 5 g onion powder
- 5 g dried thyme (or 10 g of fresh thyme)
- 30 ml olive oil
- 1 onion, quartered (optional)
- 4 cloves of garlic, crushed (optional)
- 250 ml beef broth (optional)

Instructions
- Preparation:
- Take the sirloin roast out of the fridge and let it rest at room temperature for about 1 hour. This helps in even cooking.
- Preheat the Oven:
- Preheat your oven to 220°C (428°F).
- Season the Roast:
- In a small bowl, combine the coarse sea salt, black pepper, garlic powder, onion powder, and dried thyme.
- Rub the olive oil all over the roast and then apply the spice mixture generously on all sides.
- Prepare the Roasting Pan:
- Place your quartered onions and crushed garlic in the bottom of a roasting pan. This will help flavor the meat and keep it moist.
- Optionally, you can add beef broth to the pan for additional moisture.
- Roast the Sirloin:
- Place the seasoned sirloin roast on top of the onions and garlic in the roasting pan.
- Roast in the preheated oven for about 15 minutes at 220°C. This will create a nice sear on the outside.
- Lower the Temperature:
- After 15 minutes, reduce the oven temperature to 160°C (320°F) and continue to roast.
- For medium-rare, you want to cook the roast to an internal temperature of about 54-57°C (130-135°F). This typically takes an additional 45-60 minutes, but use a meat thermometer to check.
- Rest the Roast:
- Once the desired temperature is reached, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 15-20 minutes. This allows the juices to redistribute.
- Slice and Serve:
- After resting, carve the roast into thin slices against the grain.
- Serve with your favorite sides, and enjoy!

- Cooking times may vary based on the shape and thickness of the roast, so keep an eye on the internal temperature.
- Adjust seasoning to your taste, and feel free to add other herbs and spices as desired.
